I love pizza. If I had to choose to live without pizza or some of my friends, I’m embarrassed to admit what my choice would be.
That said, pizza is extremely high in carbs, calories, fat, etc. Lately, I’ve been making pizza bites out of broiled/grilled zucchini slices and they are DIVINE! They really satisfy my pizza craving and also help to get in more vegetables into my daily diet. They make a great snack to enjoy on the weekend while watching a movie, a party appetizer for the health conscious or a great dinner accompanied by some grilled chicken!
Mini Zucchini Pizza Recipe
Shredded Mozzarella (or other type of cheese)
Spray Olive Oil
Salt and pepper
Fresh Basil chopped
Cut zucchini about 1/8 inch thick. Spray each side with olive oil and season with salt and pepper. Broil or grill each side for about 2 minutes. Top with pizza sauce, mozzarella, oregano and basil. (Or add more toppings like sliced cherry tomatoes) Cook for 2 more minutes, or until cheese is lightly browned. Sprinkle with Parmesan before serving if desired. Enjoy!!!
