If you’re like me, you relish every moment of a good night’s sleep and hit the snooze button 5+ times before you wake up for day.. This often leads to me missing breakfast as I rush out the door with still-wet-from-showering hair. And it’s well-known that breakfast is the most important meal of the day. To avoid this, I like to make breakfast “on the go”. One of my favourite breakfasts to make is healthy Whole Wheat Apple Muffins, made with wholesome ingredients so I can grab two for my purse to eat on my long commute to work.
Recipe – Whole Wheat Apple Muffins (Breakfast on the Go!)
2 cups of whole wheat flour (or 1 cup whole wheat flour and 1 cup of oat
1 tablespoon baking powder
1/2 teaspoon salt
1.5 teaspoons of ground cinnamon
3/4 cup of nonfat/skim milk
2 egg whites (or 1 egg)
1/3 cup of unsweetened applesauce (or 1/4 cup vegetable oil)
1/4 cup honey (I used 1/2 cup of Stevia instead, you can also use 1/4 sugar, 1/4 Stevia – adjust to taste)
1 cup chopped apples
Note: Feel free to add 1/4 cup of raisins or chopped nuts
1. Preheat your oven to 375 degrees F (190 degrees C). Lightly grease one 12-cup muffin tin. (I greased mine with a light nonfat spray)
